It's a fun improvement over shaking cream in a jar for 40 minutes, and only getting a half pound at best. I've learned that it's best for the cream to be brought to 65 degrees quickly. I bring it up to temperature in a bowl of hot tap water, because it tastes fresher when it's warmed up quickly than if it's left to sit at room temperature. Any warmer than 65 and it will be too soft and it might turn out whipped butter. And, much cooler and you are spending more time at it than you need to. This churn can do three quarts, but I'm doing 9 cups to make it any even pound finished butter. It's also a good idea to use cream that is skimmed off three day old milk. Any fresher than three days and it can take hours for the butter and buttermilk to separate. It keeps well wrapped in parchment paper!
